Nutria were the source of an urban legend that the Catholic church in Arkansas designated muskrats as fish so their adherents could still eat them on Fridays. Plus Saturdays, Sundays, Mondays... Nutria are bigger but I don't know that either muskrats or nutria are particularly tasty.

I have a squirrel cookbook if anyone wants to adapt a recipe.
Maybe the state of California could sponsor a contest, modeled on the invasive snake hunt in the Everglades. Extra points if California exports a few colonies to the Everglades
