Here in my part of NC we call these pop up stores. You can go by an empty lot in the morning and then when you go back by it in the afternoon there's not only a Dollar General there but the parking lot is full too. We think aliens are involved.

Nurse Cindy is right on the money. I’ve seen dollar stores in both Carolinas “pop up” even in isolated rural areas. I’ve never seen a self-checkout option, and they’re mostly devoid of produce, so the one in the story is to be commended for having both!
